The Best Fall Apart Chuck Roast

Good Morning.

Fall is in the air this morning. It’s slightly cooler and the air smells a bit crisp. On days like this I love to use my slow cooker because it makes the house smell warm and inviting.

I’ve slowly been working on transferring some of my recipes over from In A Mini Skirt. Hopefully I’ll eventually get them all moved, but for now, here is my recipe for fall apart chuck roast. I’d suggest not using anything but the chuck roast, and I prefer what is considered a 7 Bone Chuck Roast, for this recipe as chuck usually benefits greatly from the longer cooking time. Not sure what a chuck roast is? Certified Angus and Beef: It’s What’s For Dinner have great information regarding cuts of meat. I really like the interactive butcher counter from Beef: It’s What’s For Dinner. Chuck is also available as a lean cut. I prefer Chuck Roast for this recipe because the flavor is more robust in a Chuck Roast, in my opinion.

This is my favorite roast recipe. I usually serve this with steamed potatoes and carrots topped with a little dab of butter. So good. But I have to say, my favorite way to eat this is warmed up leftover beef, sliced, and on a good crusty roll or croissant. I use a mayo/horseradish spread and some thinly onion. So good!

Instructions
  1. Mix together your flour, salt and pepper and liberally sprinkle all of your chuck roast. Fry bacon in a large skillet. Remove the bacon before it's crispy, but leave the drippings. Sear all sides of your roast in the bacon drippings. While your roast is searing, place onions, brown sugar, beef stock fried bacon and bay leaves in slow cooker. Stir to combine. Once roast has seared, place on top of the onion mixture. Cook on low for 8 hours.
